Now we all love brownies and if I was honest I could eat them everyday. So I set about creating a raw version which has a added benefit of not even having to wait for them to cook ! These are stody and chewy and they feel like a great treat when you are being good. It is also a great way to eat the healthy omega fats from the nuts in a more fun way.
Prep: 5 mins
You will need:
- 1 ½ Cups of your favorite nut ( I used walnuts)
- 50g Gluten Free Porridge Oats
- 6 dates
- 3 tbsp. Cocoa powder ( isn’t raw as heated, or use Cocao powder which is raw)
- 1 Scoop of Protein Powder ( I use TMH Pure Protein which is whey based but you can use a Vegan alternative)
- Pinch of sea salt
- 1 tbsp. of coconut oil
Take out 6-8 walnuts and lightly crush them with your hands. Then place the remainder walnuts into a blender until you have a crumb mixture, now add the gluten free oats, and the cocoa powder and blend again.
Add the diced dates , sea salt and coconut oil and blend until it starts to combine.
Add more dates if the mixture isn’t holding together. Lastly add the other hand crushed walnuts to give it a crunchy consistency.
Pour the mixture into a baking dish that has been lined with parchment paper and press down firmly until smooth.
Place in the fridge for at least 60 minutes to set, then cut your desired shape
